How a Pizza Stone Actually Works

A stone is the single most effective upgrade to home pizza, and the reason is a property of the material rather than anything mystical about ceramic.

Thermal Mass and Transfer

A hot stone stores a large quantity of heat and releases it quickly into whatever touches it. When dough lands on it, the base receives a sudden intense burst of energy.

That burst does two things at once: it drives water out of the underside as steam, and it sets the base before the dough has time to absorb moisture from the sauce above.

A metal tray, by contrast, has less mass and gives up its heat almost instantly, then sits cool underneath the dough for the rest of the bake.

What Matters in a Stone

  • Thickness, which determines how much heat it stores
  • Material: ceramic, cordierite and steel all behave differently
  • Whether it can be removed for cleaning, which most built-in stones cannot
  • Flatness, since a warped stone bakes unevenly
  • How long it takes to reach temperature

Ceramic is slightly porous, which lets it absorb moisture from the dough surface during the first minute.

Preheating Is Not Optional

A stone reaches temperature considerably more slowly than the air around it. An oven that says it is ready has an air temperature at the set point and a stone well below it.

This is the most common mistake with any stone. Fifteen minutes in a dedicated pizza oven, and closer to forty-five in a domestic oven, is what the stone actually needs.

Thermal Shock

Stones crack when temperature changes suddenly. Putting frozen food on a hot stone, or running water onto one that has not cooled, is what does it.

Let it heat with the oven rather than putting it into a hot one, and let it cool completely before touching it with anything wet.

Cleaning

Scrape crumbs when cool, wipe with a dry cloth. No soap, no detergent, no dishwasher.

Stones discolour with use and this is not a problem. A stained stone is a used one, and the marks have no effect on baking.

Stone Versus Steel

Steel conducts heat faster and produces a more aggressive base, closer to a professional deck. It is heavier, more expensive and does not absorb moisture.

Both work well. Stone is more forgiving for a beginner and less likely to burn a base before the top is done.
